Summer has left us lost and lonely and didn't even text me back when I asked if he wanted to come over (dick) this is by far my worst. break up. EVER! For anyone else still holding on to Summer this will definitely help dull the pain of Autumn's arrival. Oh Autumn, why you only dry my washing 90%?

I didn't originally plan on posting this recipe so I apologise for the lack of pictures but this is so simple I doubt you need them anyway! I posted this picture on instagram and facebook last night and a lot of people have been asking how I made it so here is my secret recipe! Spoiler alert - it's very similar to my coconut banana ice cream recipe.

For everyone who likes Niceblocks these are perfect replacement if you can't get your hands on one and/or don't feel like paying $4 (!!!! a lot of money in terms of ice blocks) from your local dairy - I wont name names but yes it happend. On a side note the Days Bay Dairy on the beach sells them for $2.50 you go Days Bay Dairy!

Ingredients - makes 4

2 small frozen bananas
1/2 cup cashews soaked overnight
1/4 - 1/2 cup water or coconut milk
1 Tbsp maple syrup/honey
Vanilla paste

Dark chocolate
Shredded coconut
Toasted almonds

Blend all the ingredients in a food processor until smooth, if the mixture is too thick just add more liquid. Put the mixture in to your ice block molds and freeze for at least an hour. Once frozen all the way though you can eat them as is or smother them in chocolate, toasted almonds and coconut.

To decorate, melt the chocolate over a double boiler and dip your ice blocks into the chocolate then into your toppings.

Coconut Milk vs. Water

Both are very tasty! Coconut gives it a richer creamier texture and probably a few more calories too! If you use water you get a stronger banana flavour in the end product.

  1. You could sell these for $2.50

    1. I could set up a stall outside your bedroom and sell them for $2.50?
